MAPLE & PEACH BBQ SAUCE

I found this recipe on the web and made a few adjustments. I prefer fresh ingredients over canned, and of course I dickered with some of the quantities, but not too much.

Anyway this a great barbecue sauce that doesn't look anything like barbecue sauce and is particularly good with chicken.

It has an impressive look and you can easily convince people this is an old family recipe.

WHAT YOU NEED:

* 32 ounces canned peaches (or use fresh peaches, adding a little water. Depends on how juicy those peaches are.)
* 1 1/2 cup cider vinegar
* 1 cup cooking oil
* 1 cup brown sugar
* 3/4 cup maple syrup
(use a Grade B. It's less expensive & more flavorful. Sometimes called "cooking syrup".
* 3 tablespoons fresh lemon juice
* 2 tablespoons dijon mustard
* 2 tablespoons cornstarch
* 1 tablespoons worcestershire sauce
* 1 clove garlic, minced
* 1 teaspoon cinnamon
* 1/2 teaspoon black pepper
* 1/2 teaspoon fresh ginger

HOW TO DO IT
Simple.
PUREE peaches in a blender. Be sure to remove the pits if you use fresh peaches.
DISSOLVE cornstarch in a little water.
COMBINE all ingredients in a saucepan and bring to a low boil.
REDUCE heat and simmer for 30 minutes
STIR frequently to prevent burning.
COOL

Items you might want to 'doctor' it with:
sesame seeds
replace the lemons with lines
add a dash of vanilla
add a little cayenne for that extra little bite, but careful you may overpower the peaches.
